STANDARD ANALYSIS OF OIL AND FAT provides students with basic disciplinary knowledge and skills in standard and conventional methods of oil and fat analysis. Physical and chemical properties affect the quality of oils and fats and are important factors for consideration in the production of oil and fat products. Standard analysis used to determine parameters such as refractive index, colour, specific gravity, oil moisture content, iodine value, peroxide value, acidity, saponification value and unsaponifiable matter in the laboratory are introduced. Efforts to minimize wastage and pollution to the environment as green practices are emphasized.
